Asian Chopped Salad

Ingredients

1/2 bunch chopped kale or chard, stemmed & chopped
1/2 head cabbage, finely chopped
2 broccoli stalks, peeled & shredded
1 red bell pepper, chopped
2 celery stalks, chopped
4 green onions, chopped
½ cup cashews, chopped

For the dressing:
2 carrots
½ inch piece of ginger, peeled
1 clove garlic
1 tablespoon tamari
1 tablespoon rice vinegar
Juice from an orange
2 teaspoons raw honey or pure maple syrup
1 tablespoon sesame oil
1 tablespoon olive oil
2 tablespoons water

Directions

1. Place salad ingredients in a large bowl, except green onions and cashews.

2. In a high speed blender, blend the dressing ingredients until smooth.

3. Add dressing to the salad and top with the green onion and cashews.
