Avocado Chimichurri Sauce

Yields

about 1 cup

Ingredients

1 large handful of parsley

2 cloves garlic

3 pitted olives (I used Castelvetrano), optional

1/2 avocado

1 tablespoon lime or lemon juice

1/4 teaspoon red chili flakes (more or less depending on how spicy you like it)

salt and pepper, to taste

2-3 tablespoons vegetable broth


Directions

1. Pulse all ingredients together in food processor until combined but still slightly chunky.

Notes

Delicious over grilled veggies.

Vegan.
