Baked Avocado Fries

Ingredients

1 avocado, peeled & pitted, cut into thick slices

2 tablespoons unsweetened shredded coconut

2 tablespoons pepitas (shelled pumpkin seeds), chopped

Salt, just a dash

Lime juice

Directions

1. Preheat oven to 400 degrees F.

2. Line a baking sheet with parchment paper.

3. On a small plate, mix the coconut, pepitas, and salt.

4. Coat both sides of the avocado slices in the mixture and place on the lined sheet.

5. Bake for 12-15 minutes. Drizzle with lime juice.

Notes

This recipe can be doubled/tripled/quadrupled.
