Cauliflower Scramble

This recipe uses cooked quinoa. Great way to use leftovers!

Yields

Ingredients

2 teaspoons coconut oil
2 cloves garlic, minced
½ onion, chopped
1/2 head cauliflower, finely chopped (about the size of scrambled eggs)
2 cups chard, chopped (or any green)
1/4 teaspoon turmeric
1 teaspoon dried rosemary
1/4 cup water or vegetable broth
1-2 cups cooked quinoa
Salt & pepper

Optional toppings: salsa, sliced avocado

Directions

1. Heat oil in skillet and sauté garlic and onion for a few minutes. Add the cauliflower, greens, and spices continue to sauté for a few minutes.

2. Add the water, cover and allow to steam for 2-3 minutes.

3. Add the quinoa and heat through.

4. Season with salt and pepper. Top with favorite toppings.
