1-1 1/2 cups
2 tablespoons sun-dried tomatoes (not in oil)
2 small dates, pitted
1/4 hot water
1/4 cup raw cashews, soaked, rinsed & drained
1/4 cup grape tomatoes
1/2 small red bell pepper
1/2 teaspoon dried basil
Dash of salt, to taste
1/4-1/2 cup vegetable broth (or water)
1. In a small bowl, pour hot water over the sun-dried tomatoes and dates and allow to sit for about 10 minutes.
2. In a high-speed blender, add all the ingredients(including the hot water used to soak the sun-dried tomatoes and dates) but start with 1/4 cup of broth.
3. Blend on high until smooth and creamy,about a minute. Add more broth depending on how thick you like it.
4. Store in a glass container in the refrigerator for up to a week.
Also makes a great dip.
