Fresh Fig Chutney

Yields

makes about 1 cup

Ingredients

2 tablespoons pure maple syrup or coconut nectar or agave
2 tablespoons apple cider vinegar
1 cup fresh figs, stems removed and cut in half
½ red onion, chopped
¼ cup raisins
½ inch piece fresh ginger, peeled and grated or ½ teaspoon ground ginger
1 garlic clove, minced
1 small jalapeno, minced or 1/4 teaspoon red pepper flakes
Salt, to taste

Directions

1. Combine all ingredients in a saucepan.

2. Bring to a boil, reduce heat and simmer,uncovered, until syrupy and slightly thickened, about minutes. Stir occasionally during cooking.

3. Serve hot or cold as is or pulse in a food processor for a smoother consistency.

Notes

This is delicious using other fruit too, try mango, pineapple, apples, peaches or pears instead of figs.

Delicious as a topping for my Indian Spiced Chickpea Burgers!
