Kale Waldorf Salad

Make sure to massage the avocado & lemon juice into the kale!

4 cups packed finely chopped raw kale (about half of a bunch)
1 small avocado, diced
1 tablespoon fresh lemon juice
Salt, to taste
1 large apple (your favorite), chopped
1 cup thinly sliced celery
½ cup walnuts, chopped
¼ cup raisins


1. Place kale in a large bowl.

2. Add the avocado, lemon juice, and salt to the kale.

3. Massage the dressing & avocado into the kale for 2-3 minutes (literally get in there with your hands!) Allow to sit for 5-10 minutes.

4. Stir in the remaining ingredients. Enjoy!
