Red Velvet Energy Bites

This recipe uses cooked beets. It will work with raw but the flavor may be slightly less sweet.

Yields

10-12 bites/balls

Ingredients

¾ cup walnuts
½ cup cooked beets
½ cup dates, pits removed
¼ cup hemp hearts
¼ cup unsweetened shredded coconut
¼ cup raw cacao powder
½ teaspoon vanilla extract
1/8 teaspoon salt

2-3 tablespoons each (optional for rolling finished bites in): hemp hearts, shredded coconut, cacao powder

Directions

1. Place all ingredients (except the extra 2-3 tablespoons hemp hearts, coconut, cacao) in a food processor and process until it forms a dough-like consistency.
2. Roll into 1 ½ inch balls. You will get about 10-12.
3. Place the extra 2-3 tablespoons hemp hearts, shredded coconut, cacao powder in separate piles on a plate. Roll some of the balls into each pile to coat.
4. Store in the refrigerator or freeze.

Notes

Feel free to use different combinations of nuts/seeds!
