Southwest Kale Salad

serves 2-4

Ingredients

1 bunch kale, stems removed & finely chopped
1 orange or red bell pepper, diced
1 ½ cups cooked black beans or 1-15oz can, rinsed & drained
1 cup grape tomatoes, cut in half
1 mango, peeled and diced
1/2 cup frozen corn, thawed

For the dressing:
1 ripe avocado, remove pit and scoop out flesh
1 small jalapeno, chopped (remove ribs & seeds for less spice) or a few dashes of hot sauce
Juice from 1 lime
1/4-1/2 cup cilantro, chopped
2 garlic cloves or 1/4 teaspoon garlic powder
Salt, to taste
A few tablespoons water

Directions

1. Combine all the salad ingredients in a large bowl.

2. Place dressing ingredients in a blender and blend until smooth. Adjust the amount of water to achieve desired consistency.

3. Pour dressing over the salad and stir well.
