4 cups baby arugula
2 carrots, shredded or finely chopped
1 raw beet, peeled & shredded or diced
1/4 cup raw sunflower seeds
For the dressing:
Juice from the segmented orange
1 tablespoon olive oil
dash of salt
1. Peel and segment the orange over a large bowl,squeezing all the juice. Then cut the segments into bite-size pieces and put aside.
2. Whisk in the olive oil and salt to make the dressing.
3. Stir in the rest of the ingredients and add the orange segments.
