Superfood Trail Mix Energy Bites

Makes 20-24 bites


1 very ripe banana

1/2 cup applesauce

1/2 cup dates, pitted

2 tablespoons tahini or nut butter

2 tablespoons coconut oil

1 teaspoon vanilla

1 1/2 cups rolled oats

½ cup almonds,chopped

1/4 cup shredded coconut

1/4 cup raisins or other dried fruit

3 tablspoons cacao nibs

3 tablespoons hemp seeds

3 tablespoons ground flax

1 tablespoon chia seeds

½ teaspoon cinnamon

½ teaspoon sea salt


1.In a food processor – Combine banana, applesauce, dates, tahini, coconut oil and vanilla and blend until smooth.

2.Pulse in rest of ingredients.

3.Place dough in the refrigerator for at least 30 minutes.

4.Scoop dough using a small ice cream scoop or spoon (2 scoops per bite) and roll into balls (about 1 1/2" per ball).

5. Store in refrigerator or freeze.


Feel free to use any nuts/seeds/dried fruit you have.
