2 cloves garlic
2 green onions, rough chopped and save some of the green part for garnish
1 1/2 cups frozen peas, thawed
2 tablespoons tahini
Juice from 1/2 lime (about 1 tablespoon)
2-4 tablespoons low sodium vegetable broth
Salt, to taste
1. Put garlic and green onion in a food processor and pulse to chop.
2. Add the thawed peas, Tahini, lime juice, vegetable broth (start with 2 tablespoons), and salt and process until creamy and smooth, adding more vegetable broth to achieve desired consistency.
3. Transfer to a bowl and garnish with the green parts of the onion.
Serve with raw veggies or as a sandwich spread in a giant collard leaf or bread of choice.
