Vegan Tzatziki

Ingredients

1/4 cup raw sunflower seeds

1/4 cup hemp seeds

2 cloves garlic

2 tablespoons red onion

2 tablespoons fresh lemon juice

2 teaspoons apple cider vinegar

1/2 teaspoon capers

1/4 teaspoon salt

1/8 teaspoon pepper

1/2 cup water

2 tablespoons fresh parsley, finely chopped

2 tablespoons cucumber, finely chopped

1/2 teaspoon dried dill

Directions

1. Soak the sunflower seeds in hot water for 10-15 minutes. Then drain and rinse.

2. Place the seeds in a high speed blender with the next 9 ingredients (through water) and blend until smooth and creamy. Taste and add more salt if desired.

3. Pour into a bowl and stir in the parsley, cucumber, and dill.
