Walnut Tacos (Raw)

serves 2-4

Ingredients

1 cup raw walnuts
1 red bell pepper, rough chopped
½ red onion, rough chopped
¼ cup cilantro
1 small Roma tomato, rough chopped
1 small jalapeno (optional)
1 teaspoon chili powder
1 teaspoon ground cumin
½ teaspoon garlic powder
Salt, to taste

Cabbage or large lettuce leaves (for the shells)
Optional toppings: chopped tomato, shredded carrot,

avocado, salsa

Directions

1. Add all ingredients to a food processor(except lettuce leaves and toppings) and pulse until finely chopped.

2. Scoop mixture into the lettuce leaves and top with toppings of choice.

Notes

If you do not have a food processor, just finely chop the walnuts and vegetables and mix together with the spices.

Vegan.
